Application
Jellogel has been developed to provide transparent ready to serve Jelly and Pumpable Jelly for use in Ice creams.
Outstanding Properties/Advantages
  • It is a Jelly, which has a distinct, soft, cut table as well as a bit chewable feel of its own
  • It enhances the flavor release in the mouth because the flavor incorporated into the Jelly gets released in an accentuated manner
  • It has a sparkle on account of complete transparency, which makes it shine adding uniqueness to the ice cream
  • Jellogel has multiple uses:
    • Can be used as ripple sauce
    • Can be used as topping where Jellogel bits sparkle like cut gems over the ice cream
    • It can be pumped into the cone of the ice cream providing soft centered cone of any body & texture
Usage Level
Water 100 ml
Sugar 400 g
Citric Acid 3 g
Color & Flavour As per choice
Jellogel 50 g
Preparation Method
  • Mix 50 g of Jellogel into 400 g of dry sugar
  • Bring 1000ml water to boil
  • Pour mixture of Jellogel & sugar into boiling water
  • Add color & flavor of your choice
  • Immediately after pouring switch off fire and keep stirring for a while
  • Now leave this mixture to cool into a transparent jelly
Storage and Shelf-life
The shelf-life of this product is a minimum of 12 months from date of production provided it is stored in the tightly closed original packing.
