Application
Icopodric DD5 is an integrated & complete Stabilizer-Emulsifier System for Soft Serve Ice cream application perfected under German technical expertise using special grade combination of Emulsifiers & Stabilizers to revel excellent overrun & stand-up quality in the soft serves.
Outstanding Properties/Advantages
  • It imparts velvety texture as it reduces the size of ice crystals to extreme fineness
  • Both body as well as texture characteristics are brought to the "Excellent Score Levels"
  • Overrun i.e. stand up quality and melting resistance are significantly improved
  • Although 60% overrun in soft Ice creams having 8% fat is ideal but extra overrun with higher dosage of Icopodric type DD5 is invariably achieved
Usage Level
Though the % of use has to be adjusted depending on the type of softy machine being used, a doze of 0.4% to 0.5% is recommended for Ice cream mixes containing 10% to 12% fat.
Preparation Method
For easy dispersion required quantity of Icopodric DD5 is well mixed into dry sugar and stirred into the mix at 50°C, which is then processed as usual.
Storage and Shelf-life
The shelf-life of this product is a minimum of 12 months from date of production provided it is stored in the tightly closed original packing.
